Cooking with Apple Cider This Fall

Cooking with Apple Cider This Fall

'Tis the season to stock up on fresh apple cider.

Should you not finish your jug of cider — or you bought three jugs too many — don’t let the leftovers go to waste. Instead, use that apple cider in these tastes-like-fall recipes.

Breakfast

TODAY contributor Tracy Saelinger suggests whipping up healthy Whole Wheat Apple Cider Pancakes topped with chopped apples. For a more decadent treat, whip up these Apple Cider Buttermilk Pancakes with Apple Caramel Syrup.

For a sweet breakfast on the go, try these Cinnamon Streusel Apple Cider Muffins.

Craving something “cozy” and not too sweet? Make this quick-and-healthy breakfast: Apple Cider Oatmeal.

Eat your veggies.

When your cider starts fermenting, use it to braise your fall vegetables. (Or just use sparkling cider.)

For the perfect fall side dish, toss green beans in a sauce made of caramelized onions and apple cider. (Find the recipe, courtesy of Rachael Ray, here.)

Or try Bon Appetit's Onion Soup with Apple Cider.

We can personally vouch for Barefoot Contessa’s Roasted Butternut Squash Salad with Warm Cider Vinaigrette. It’s the closest salad gets to “comfort food” status.

But don’t forget the meat.

We already know that apples and pork make a great team. So, why not add apple cider into the mix?

Try this Slow Cooker Apple Cider Pulled Pork — another recommendation from TODAY's Saelinger.

This meal just sounds like fall: Cider-Dijon Pork Chops with Roasted Sweet Potatoes and Apples.

Having a dinner party this fall? Get organized, and braise a pork shoulder in cider, ginger beer and chicken broth up to three days before your event.

If you don’t mind throwing on a jacket and barbecuing in chillier weather, Jamie Oliver’s Royal Barbecued Pork Loin has apple cider in its impressive homemade barbecue sauce.

Cider isn’t just for pork. Try this four-fork-rated Cider-Brined-and-Glazed Turkey recipe.

Cider-Marinated Short Ribs, anyone?

And apparently this chicken-with-cider recipe from Cooking Light is, A, healthy and, B, still contains bacon. We approve.

Simply Recipes’ Honey Apple Cider Glazed Salmon sounds pretty crave-worthy, too.

Dessert

Who doesn’t love a good apple-based dessert?

We can’t wait to try this Apple Cider Doughnut Cake this fall. Or this Apple Cider Tiramisu.

And for a more refreshing sweet treat, there’s The Kitchn’s Spiced Apple Cider Sorbet.

Or make the kids happy with Apple Pie Floats, no pie required.

Cheers!

Dress up your leftover cider with booze!

While the combinations are endless, here are three recipes to get you started:

Emeril Lagasse’s Hot Apple Cider with Rum, Martha Stewart’s Maple-Bourbon Cider and Apple Cider Sangria from How Sweet It Is.

And if you can’t decide between drinks and dessert, don’t. Just sip this Warm Vanilla Cider, topped with honeyed walnuts and whipped cream, and you’ve got the best of both worlds.
