Southwest Chicken Wraps

Looking for new easy to make additions to your summer picnic or BBQ menu? Try these tasty Southwest Chicken Wraps. They are healthy and kid friendly. All you need to add is a bag or two of your favorite snack!

4 Sandwich wraps (10 inches each)

3/4 c Reduced-fat sour cream (can also use deli mustard or reduced-fat mayo)

2 to 3 tablespoons chopped pickled jalapenos (optional)

2 tbsp Lime juice

Coarse salt and ground pepper

3 c Baby spinach

3 c Chicken or turkey, shredded

1 can Black beans, drained and rinsed

1 Large tomato, thinly sliced

1 Small red onion, thinly sliced

1 Avocado, thinly sliced

  1. In a bowl, whisk together sour cream, jalapenos, and lime juice, plus a little bit of salt and pepper.

  2. Spread sandwich wraps with the sauce, leaving a 2-inch border. In center of wraps, layer equal amounts of baby spinach, shredded chicken, black beans, tomato, onion, and avocado.

  3. For each wrap, fold two sides of wrap over filling, then roll tightly, ending seam side down.
