5 Ways to Add Veggies to Your Breakfast

One of the best ways to add more veggies to your diet is to start including them in your breakfast. Not only are there unlimited yummy ways to add veggies to your morning meal, but it's also a great way to start your day with fiber and antioxidants! From smoothies to scrambled eggs, check out these five veggie-licious ways to boost your breakfast.

1. Add a handful of steamed kale or Swiss chard on top of a poached egg.
Serve it on top of gluten-free whole-grain toast for an open-faced breakfast treat. Season to taste with chili powder, sea salt, and pepper.

2. Toss fresh spinach or collard greens into your smoothie.
Add a pinch of ground cinnamon and a drizzle of raw honey to sweeten it up!


3. Add pureed sweet potato and mashed white beans with Parmesan to your boring oatmeal. Sprinkle with a dash of sea salt and black pepper, along with a pinch of cayenne pepper, for a flavorful kick first thing in the morning.

4. Add chopped asparagus, cherry tomatoes, hot sauce, and diced avocado to a bowl of warm scrambled eggs. Wrap eggs with steamed kale leaves to make "egg wraps," and season to taste with sea salt and pepper.
