    Why You Shouldn't Always Cook with Olive OilFor the longest time, the only oil I bought was extra-virgin olive oil. After all, it's high in heart-healthy antioxidants called polyphenols and monounsaturated fats, which can help lower "bad" LDL cholesterol and raise "good" HDL cholesterol levels. Then a friend, who was also a chef, told me that there are actually times when olive oil is not the best choice. So I looked into the best uses for olive oil, and when to choose another oil.

    When to use olive oil: When you're making salad dressing or sautéing vegetables over medium heat, olive oil is an excellent choice. Since it has a distinct flavor, use it in dishes where you want to taste it-drizzled over steamed vegetables, soup or bread, for example. Olive oil has more monounsaturated fat than other oils, making it a great choice for heart-healthy cooking.     When to skip olive oil: If you're cooking over high heat, don't choose olive oil. Olive oil has a lower smoke point-the point at which an oil literally begins to smoke (olive oil's is between 365° and 420°F)-than some other oils. When you heat olive oil to its smoke point, the beneficial compounds in oil start to degrade, and potentially health-harming compounds form.

    What to use instead: Canola oil, on the other hand, has a higher smoke point and is a good choice if you'll be cooking over high heat, as when you're roasting vegetables or sautéing food over high heat. It also has a neutral flavor and is packed with heart-healthy alpha-linolenic acid (an omega-3 fatty acid), which makes it ideal for baking. It's also cheaper than olive oil, so if you're trying to trim your grocery bill then canola oil is a good option. Most of the canola oil in the United States is made from genetically-modified canola seeds, however, so if that's a concern, choose organic canola oil. Peanut oil has a very high smoke point, and so is also good for high-heat cooking, like stir-frying. Although more expensive, avocado, macadamia nut, tea and almond oils are also good mono-rich choices for everyday use.

      Please use Rice Bran Oil if you find in the market for frying at high temperatures. It has the highest smoke point of all! It is also the most nutritious discovered so far.

      I'm surprised the author didn't even mention coconut oil :P Canola (even organic) is fraught with controversy and health concerns (do your own research). Coconut can handle high heat without breaking down or smoking, and is incredibly healthy - and tasty too!

      Olive oil is great for salads

      Canola oil is not good for you! Heres why... Canola oil is developed from the rapeseed plant, which is part of the mustard family of plant's. These oil's have long been used for industrial purposes (candles, lipsticks, soaps, inks, lubricants, and bio-fuels). It's an industrial oil, not a food! Rapeseed oil is the source behind mustard gas, and on it's own causes emphysema, respiratory distress, anemia, constipation, irritability, and blindness. But because of genetic modification, it is now sold as a food. It's believed now that rapeseed oil has a cumulative effect, taking almost ten years before symptoms begin to manifest. One effect of long term use is the destruction of the protective coating surrounding nerves called the Myelin Sheath. Symptoms include: Tremors and shaking. Uncoordination when walking or writing. Slurred speech. Deterioration of memory and thinking processes. Difficulty urinating/incontinence. Breathing problems. Nervous breakdown's. Numbness in extremities. Heart problems/arrhythmia. From a nutritional perspective, canola oil has been found to deplete Vitamin E. It has a tendency to inhibit proper metabolism of foods and normal enzyme function. It also depresses the immune system. Canola oil has been removed from our household and our families households. We do not buy or use anything that contains canola. Before you ingest something, it's probably a good idea to do some research on it first. I'm not trying to scare anyone. I'm just trying to educate. Because the food companies that use GMO's and canola oil, do not want you to know any better.

      oh, sure canola oil, you mean the oil that is genetically modified, the one that was used as an industrial lubricant before someone said "lets sell it to people as a healthy oil".....if you really want an oil that is healthy at high temp's, use COCONUT OIL its the safest and most healthy oil you can use.

        Well... coconut oil is hard at room temp. - so it's like a fat and kinda bad for your body, but industry loves it - it's cheap and easy to preserve.

      Coconut oil is best for a whole passel of reasons. It can take high heat; and it does not negatively affect the liver, as other oils do. It doesn't go bad. Further, do not believe the propaganda that because coconut oil is saturated, it causes heart attacks. It is the BEST oil out there. Read the books by Bruce Fife.

      COCONUT OIL ALL THE WAY,since i was a child my grandmother always make her coconut oil and after she finish boiling the coconut to oil it leave a very nice custard that can use on bread,crackers or put into dishes,im glad i can make my own coconut oil from scratch.

      To hell with them all! Use this, use that! I'm using motor oil from now on. 10w40 san take any heat and contians lots of iron and I mean real iron. Just make sure you don't use that synthetic crap. It's time the real men took over here. Enough of this sissy cooking!

      Just another garbage piece from yahoo. So called experts making a big deal column about the most mundane and basic things. Some "expert" will come on and say " wash your dishes after you eat or you will have bacteria on your plate next time you use it". A 3 year old kid knows to wash the dishes after using them. If this is all the expert advice yahoo can give they should get out of the business. They are almost there anyways..

      Yea, eat the GMO Canola oil... Get organ failure like the Monsanto lab rats did. Eat the Canola... It's simply darwinism... When the GMO eaters are all dead, the smart people will go on living with olive oil.

      Coconut oil is extremely healthy on food. Also you can use it for your hair...very healthy and the hair get strong. Check Vatika or Dabur coconut oil for hair
