    Long weekend campfire-inspired menu

Fingers crossed that this, the second last long-weekend before summer's end, will feature clear blue skies, warm breezy evenings and nights lit by countless stars — the perfect scene for a nostalgic campfire-inspired cookout.

Enjoy these summer camp-themed dishes; they can all be prepared on your barbecue, hibachi or fire pit — no need to pack up the car and head out of town. We'll help you bring the flavours of the backwoods to your own backyard.

    Starter

    Criolla salad

This dish sings with summery ingredients. Using sweet onion is key to its authentic South American taste and foil-wrapped barbecued baby potatoes are the most camp-y way to serve this little spud.

    Main

    Tex-Mex sausages

We couldn't imagine a campfire cookout without hot dogs. This recipe for gourmet sausages uses many of the same ingredients — like avocado, jalapeno, lime and cumin — as the appetizer. Plus, for vegetarian guests, you can switch out the Italian sausage for any number of veggie-dog varieties available at your grocer.

    Sides

Corn on the cob with lime and spices

The arrival of the August brings crops of corn in from farmer's fields. Spicy, savoury, and smokey, this side is a perfect addition to a long-weekend barbecue and you can take the corn off the cob to add to the sausage recipe.

    Minted zucchini slaw

To capture its fresh taste, eat zucchini minutes after slicing. Using a grater cuts down on prep time while the addition of mint kicks up the flavour. We like it as a last-minute side dish.

    Dessert

    Campfire bananas

This dessert was the inspiration for our entire menu; satisfy everybody's sweet tooth with this campfire classic.

    Cocktail

    Campfire coffee

August evenings tend to be a bit on the chilly side, so warm up with this delicious twist on the Hot Toddy, topped with vanilla bourbon whipped-cream.
