One of my favourite fruits to eat are fresh, juicy peaches. They're only available in the summer, so I tend to make use of them when I can, plus they have so many health benefits. To pick the ripest peaches, make sure they have no green on them and they're just a little bit tender. (We're not looking for softness here, but will yield to gentle pressure). If they're hard as rocks, let them stand at room temperature in a paper bag for a day or two.
Peaches are great to eat as a snack, dessert or to have with your breakfast. I also like adding them to my meals for a boost of sweetness and fibre. When peaches are soft and ripe, the skin becomes more difficult to peel using a peeler. Here's an easy trick to skin peaches, without peeling away any of the flavour.
Use your peeled peaches in these six recipes:
- Peach and poppyseed sour cream pancakes
- Garden tomato and peach toss
- Wilted spinach salad with chipotle pork
- Curried burgers with peach salsa
- Peachy basil chicken
- Peach crips
